I certainly fall into that category and so here is chef Nathan Outlaw using a Robert Welch Signature range filleting knife, ably demonstrating this skill with the assistance of a cod. Always choose bright green asparagus and avoid dry or shrivelled bunches. Before cooking asparagus, hold the spear between your fingertips of one hand and bend with the other, the woody end will break off at just the right spot.

Lemon Dressing

A perfect dressing to use with hot or cold asparagus.

Gather your ingredients and utensils together. A screw top jar or jug, whisk, measuring cups, lemon reamer. Put all the ingredients into the jar or jug and shake or whisk them together.
