Jam or Curd tarts

When I used to visit my grandmother in Scarborough as a young boy the pantry was always full of jam tarts, curd tarts and cake. This takes me back to those days of simple childhood pleasures. Using half the quantity of the Short Pastry recipe shown will make 14 tarts.

First roll the pastry out thin with a rolling pin and cut into rounds with a scone cutter. Then line the patty tin with the rounds you have made. Put a little jam or lemon curd in each and bake in the oven at 190 to 200c or gas mark 5-6 for around 10 to 15 minutes.

Place on a cooling rack until ready to eat.
