Larding needles are used for larding cuts of meat, poultry or game that are naturally without fat. Essentially it is a stainless steel skewer, pointed at one end with a slot for threading at the other. A lardon is threaded into the needle, which is then pushed into the meat, poultry or game, and when the needle is extracted, the lardon is left behind in the meat.
